The Call of the Wild
There's no such thing as Welsh 'cuisine' - but what The Foxhunter in Nantyderry, near Abergavenny, does so very successfully is to bring the best of Welsh produce to the table. When I last ate at the place, chef Matt Tebbutt served up elvers from the River Wye, gulls' eggs from the Pembroke coast and sea beet from the Gower. As part of this year's Abergavenny Food Festival), Tebbutt will be sharing some of his secrets of cooking with locally sourced 'wild' food.
