Road Hog
The Foxhunter used to be the old stationmaster’s house until Dr Beeching, then chairman of British Railways, closed the line in the early 1960s.
Since then, it has been a tearoom and now a pub, beautifully situated on the edge of the Brecon Beacons national park and just a short drive from the A40 south of Monmouth.
It was named after a gold medal-winning horse ridden by Sir Harry Llewellyn, a local resident, in the 1952 Helsinki Olympics. Sir Harry’s son Roddy dated Princess Margaret and the couple used to visit the Foxhunter, long before it became the sophisticated gastropub it is today.
The current owners are Lisa and Matt Tebbutt, who took over in 2001 and restored the grade II-listed building adding Welsh flagstone floors, wood-burning stoves and leather sofas.
The Foxhunter has been a permanent fixture in various food guidebooks ever since and Matt, the chef, has recently become something of a television celebrity thanks to appearances on BBC2’s Great British Menu and UKTV’s Market Kitchen, which he co-presents with Tom Parker Bowles.
He previously worked in London for a number of top chefs, including Marco Pierre White and Alastair Little, and his food concentrates on no-frills cooking with bold flavours conjured from seasonal ingredients.
The cooking is Italian-inspired but Tebbutt uses plenty of local produce in dishes such as white onion soup with smoked mussels, Welsh ribeye steak with Jerusalem artichokes and rack of lamb with creamed savoy cabbage and bacon.
A set lunch costs £22.95 for three courses and a full à la carte menu is available at lunch and dinner.
The Foxhunter also has two self-contained cottages for diners who want to make the most of this idyllic spot for a weekend of walking and fishing in the nearby River Usk.
